KTown Cook Book: Quick and Easy Carrot Hummus

Each month, Chef Alyssa will open up her KTown cookbook and offer up some of her very own nutritious, healthy and kid-friendly recipes. Each and every day, over the last year, she has taken cues from the children, altering, tweaking and changing recipes to meet both their palette and nutritional needs.

The Chef’s Choice will be a reflection of those recipes, and a source for mom’s and dad’s at home, to whip up something quick, tasty and healthy for both themselves and their children.

First up, is a simple Carrot Hummus.

This is a great nutritious option and can be served as an appetizer for the whole family, a child’s birthday party, or a simple snack during an afternoon play date. The ingredients for this recipe are usually staples in any fridge and pantry, and with a food processor, can be on the table in under ten minutes.

Pairing the hummus with crackers, pita bread or freshly cut vegetables, make this a no-fuss, highly nutritious snack!

Ready in 10 minutes

Serves 8 people

Ingredients

  • 1 can chickpeas

  • 2 tsp salt

  • 2 tsp parsley

  • 2 tsp minced garlic

  • 4 carrots peeled,diced and roasted (or boiled)

  • 2 tbsp oil

Preparation

  1. Peel and large dice carrots, cook in oil with salt & pepper in oven at 350 until tender. Or boil in water with salt until tender and drain

  2. Drain chickpeas and place into food processor. Add the remaining ingredients and blitz until smooth.

  3. Add a tablespoon of oil at a time if more moisture is needed.  

Tips

You can flavour hummus with just about anything from boiled or roasted beets to  sauteed spinach. Adding vibrant coloured vegetables gives the hummus a fun colour for kids to enjoy and also provides those necessary  daily servings of vegetables!

Best served with mini pitas,  multigrain crackers,or your favourite cut up vegetables!
